Yummy Tortilla Soup Recipe

I had to go to a luncheon (I really did have to go - I'm trying so hard to be good that I didn't want to throw myself in with the tons of goodies that would be there). We were served Tortilla Soup. And let me just tell you, it was splendid! I even asked for the recipe. I looked it over and it looked just fine. So here it is:

1 large onion, chopped
2 cloves garlic
2 Tbsp. oil
2 lb. diced or shredded, cooked chicken
1 (14 1/2 oz.) can tomatoes
1 (5 oz) can Ro-Tel tomatoes & green chilies
1 can beef broth
1 can chicken broth
1 can tomato soup
1 1/2 cans water
1 can drained corn
1 can drained black beans
1 tsp. cumin
1/2 to 1 tsp. chili powder
1 small can tomato sauce
1 tsp. salt
1 tsp. lemon pepper
2 tsp. Worcestershire sauce

Saute first five ingredients. Add remaining ingredients. Simmer for 1 hour. Serve with grated cheese, tortilla chips & sour cream.

Now, when I ate it, I held on the cheese, chips & sour cream. I don't know, but something about all of these spices together, it was wonderful!

By the way, I'm doing great today and I had a great day yesterday. Day by day, that's how it happens! (Loaf of Pumpkin bread, 2 more plates of cookies all put in the freezer for a later date).

Friday Favorites

First of all, weigh-in:
I'm down .4
YAY! Momentum is building and although I have failed miserabley at my mini-goals, they have definitely helped. So for next Friday my goal focused around my eating: tighten up! Exercise is going great so I'm not going to change a thing, just still doing cardio 4 and weights for 2.

Now onto to Friday Favorites (which sounds suspiciously like a feature that I will do week after week, but no...it just sounded catchy).

Before I get into this, I would just like to say I appreciate ANY and ALL of your comments. As I was looking over this post I just couldn't resist sharing some comments that totally cracked me up and a couple that are just plain useful.

Jessica sprays that leftover food with windex or douses it in dish soap! Brilliant!

Anne is very convincing with her "REAL FRUIT JUICE!!!" in justifying those gummy's.

Randi has such a positive spin on using the bathroom. "I'm just flushing those pounds away!" Really? Pounds? LOL!

And don't look at Becca's (giggling) bad example: piece-mealing that pan of brownies until...uh oh. "Mom, did you eat 100 brownies?"

The Skabelund's speed tactic: "I just need to put the food down the sink and turn the water on quick so the temptation is no longer there!"

and of course Stephanie, who made me laugh with this, "No worries, I eat stuff I find in the trash all the time!"

Holy Avocado Batman!

Wow, thanks for all of your awesomely fanstastic healthy food ideas! I loved reading every single one; some of you totally cracked me up. We shall reveal all of the great ideas in a healthy snack foods post coming after the contest...or you can just go look at the comments section, whatever. (Haven't had a chance to enter the giveaway? click here)
I noticed a common thread though: love for the avocado. (a variety of fresh berries also a popular choice)

So, in honor of this Californian native FRUIT (see, did you know that? I thought it was a veggie! silly me...) I thought I'd share some tidbits for you who love the green smooshy stuff.
Did you know? ...
-There is a website: www.avocado.org?
-Avocados contribute nearly 20 vitamins, minerals and beneficial plant compounds that can contribute to the nutrient quality of your diet
-Brazillians add avocados to ice cream
-The avocado is also called an Alligator Pear because of its pear-like shape and green skin. (alligator pear. yeah! that's exactly what it looks like!)
There were this many varieties of Avocado?

-Latin Americans wrap avocados up and give them as wedding gifts
-Avocados act as a “nutrient booster” by enabling the body to absorb more fat-soluble nutrients, such as alpha- and beta-carotene as well as lutein, in foods that are eaten with the fruit

And here's a recipe for turkey avocado wraps (from Simple and Delicious) we had last night for dinner:
And before you all go off to another site in a huff because it calls for cream cheese, just sub out for some low-fat variety (and only use 4 oz. instead of 8) and ta-da! It's really a yummy healthy option. (I won't mention the bacon that makes it taste reeeally yummy...)

Weight Watchers Party!


Molly: So, I'm always up for a party. I decided to have a Weight Watchers Party. I invited 10 ladies I knew that are trying to lose weight on WW. Everyone was to bring an item that they liked in bite size servings. Don't we all hate it when you go to the grocery store and buy ingredients, take the time to make a new recipe, and then realize you really didn't like it? Time and money down the drain. I thought if everyone brought a little something, we could take a bite and if we liked it, we could take the recipe card for it. I was worried because I did not want to sabatoge anyone. That is why the sample sizes. I told everyone in advance to save some points for this evening.

Also, everyone shared tips and tricks which everyone needs. I pulled out boxes of food that I like. I showed everyone how I write the points value right on the box which is very helpful when you are figuring out your points for a meal quickly.


Tips and Stuff We Liked: Write before you bite. Write what you are going to eat down that day. If it isn't written down, don't eat it.

2 great salad dressings: Ken's Fat Free Raspberry Pecan Dressing (2T = 56 cal, 0 fat, 0 fiber), Kraft Asian Toasted Sesame Dressing (2T = 60 cal, 3 fat, 0 fiber)

One friend brought Red bell Pepper Salad (on pg. 62 of your 1st WW book!). I would NEVER have made it in a 1,000 years! It was so good! 1 1/2 pts a serving!

Rosemary chicken Wraps (basically just torilla shells) but 12 grams of fiber and very yummy!

The electronic calorie counter ($12 from WW). You can walk around your kitchen or the grocery store and figure out the points so quickly. VERY HELPFUL TOOL.

Katie: This little par-tay really was pretty fun. I did feel a little outsider-ish because of my lack of "points" talk. (I'm not doing WW) Most importantly though, the food was DEELISH and the company was fab. We will be sharing all of the recipes with you as we add them. Thanks Mol!

Costco Pizza and Helpful Websites

Have you ever had a bite of Costco pizza? It is so wonderful looking with the cheese dripping off. My friend warned me because she wasn't warned and succumbed to her inner temptations - 19 points a slice! I had to go to Costco today with my kids. I had to walk by the pizza. So I bought a package of the Fudge bars that are one point each and we all ate them as we walked by the pizza station. I felt like I was getting in the pizza's face saying, "take that you evil 19 point temptation! I WON!" When I told my kids sorry, no pizza because there was 19 points, they couldn't believe it!

Today, I thought I would share with you some sites that might help you with recipes or eating out.
Weight Watchers: You don't have to be a online member. There are alot of recipes on there. Also, in the forums people post different recipes.
Light and Tasty: This site you can specify lower in fat recipes with nutritional info added. That way, if you are a WW member, you can figure out your points.
Dotti's Weight Loss Zone If you click on restaurants, it will take you to most chain restuarants and give you the WW points value for their food. It has really helped me with date nights. PF Changs and Chili's. Those great Lettuce wraps? 11.5 pts for your appetizer!
3 Fat Chicks: Look under food and then recipes, you now have just about 1000 recipes with nutrionnal values at your fingertips. One thing I like is that readers can put their votes in. 5 eggs getting the highest review and you can also add a comment.
Smart Ones: When you buy a 'Smart Ones' WW meal, you can turn this simple meal into a better meal with just a few simple, extra ingredients. Click on recipes first.
