Do You Blanch?

Do you blanch your veggies?







You should.

Here's why:

All the cool* kids are doing it.

It will make you feel culinary.

Your veggies will automatically look more appetizing.

..And thus, your veggies will taste better.

People will assume you have a knack for finding beautiful produce. They will like you more.

(Bedsides the time it takes to boil some water on the stove) It takes under a minute.

You will eat more healthy foods and live longer.



Here are my broccoli "before and afters:"

In conclusion, If you have at all tried the all-day veggie tray (which, by the way, has been wildly successful), blanching is a must. Or if you find yourself pre-packing raw vegetables to take to work or in a cooler, just give it a try.

*(I'm just assuming all of you already don't do this...I could be totally off base here...you may all have an extensive background in vegetable preparation for all I know...cut me some slack, I'm relatively new to the liking-raw-vegetables arena...)

Here's a basic rundown of the procedure:

1)Throw a handful of your vegetable of choice into a pot of boiling water for about 30 seconds (the time will vary depending on the veggie and the amount: anywhere from 15 seconds to a minute)

2)Then quickly transfer them into a bowl full of ice water until they're not hot.

That's it. (If you'd like more detailed instructions, you can find them here: How to Blanch Vegetables) And just a general FYI, the best vegetables to do this with are broccoli, carrots, snap peas, snow peas, cauliflower, green beens, fennel, and asparagus. Stuff like celery, bell peppers, tomatoes, don't need it.)

Hmm. I have always been a raw or fresh (no in between) kind of gal. I should give this a try, I guess.

Well Holly, if you already LIKE raw vegetables, maybe not. They were just SO much more palatable to me after I did it.

(on a sidenote: I FOR THE LIFE OF ME cannot type "vegetable." I always typed "begetable," which made me laugh...I kind of just wanted to leave it like that...)

I'm with Holly. If I'm cooking veggies, they're stir-fried or somewhere in a soup, but if I'm eating them raw, I want them crunchy and sweet. I could see blanching broccoli for salads and crudite, since it can be so tough, but anything else it seems like it'd make the veggies *less* tasty... But that broccoli sure it pretty.

Blanching begetables sounds like a great idea! Like you, I have to say the second broccoli picture looks way more appealing.

Here's the sad thing--getting out a pan to boil water, and another container of ice water feels like "cooking" to me. Even though it probably takes all of two minutes. So unless it's dinner time, I'd be more likely to grab a piece of fruit (not as nutritious) that I can just eat raw. I'll eat raw vegetables, but I'm not a big fan.

And yep, I really am THAT lazy.

On the other hand, I just discovered that if I keep a big bag of frozen broccoli on hand, I can nuke a bowl full and grate some cheese over it for a quick vegetable side dish. Probably takes MORE time than blanching fresh veggies would, but it doesn't "feel" like cooking since a microwave is, in my mind, a reheating appliance, not a cooking appliance. (Yes, I know this is totally nuts).

But I need to eat more veggies in the afternoons, and I gotta say blanched snowpeas or cauliflower thingies with a healthy dip sounds awfully good. Thanks for the tip!

Your all-day veggie tray idea is AWESOME. I like to pick too. I swear my co-workers likely think I'm mental (they're all skinny, 40-something men) because I am almost CONSTANTLY eating - be it celery, carrots, broccoli, cucumber slices, whatevs. My crunching is surely annoying! But I don't care.... I either munch on that stuff, or I hit the work pantry (licorice, animal crackers, goldfish, pretzels, chips, giant tubs of nuts, etc.)

Anyway... I ALWAYS blanch my asparagus, but I don't think I've been blanching otherwise... thanks for the reminder - your broc looks fab!

No, I understand. me too. I just do it once at the beginning of a day (and try to do enough to make it through one or two days) I'm trying to get in the habit of just boiling some eggs then too to have on hand.
And I did the frozen broccoli in the micro too- it just tastes a little squishier. I feel like somehow this is less work because at the *time* when I'm hankering for a snack I can just grab it instead of going to all the work of getting out the frozen broccoli (yes. I am THAT lazy :)

So funny... when I saw your broccoli post the other day I was like "I'm doing that...but... I'm going to blanch them." For real.

And the best part is people (especially with broccoli) the gas factor is massively reduced! And blanched vegetables should still be crunchy you take them out as soon as their color brightens (that's for you crunch lovers out there)

oh yes. I kept thinking when I was writing this, "I have a feeling Mrs. F already does this..."

reduced gas? I didn't know that! And yes, they're totally still crunchy...I don't know really how to explain it, they're just brighter, and less...dry...

Your posts about begetables has inspired me. I am going to the grocery store TODAY to replenish our beggies AND to try preparing them for an all-day-snacking tray. That's got to be better than animal cookies, granola bars, and graham crackers. I have to stock up on Fuji Apples (the BEST) and Clementines as well. They have been my favorites for snacking....in between graham crackers and animal cookies.

I do know how to blanch veggies. My parents used to grow a huge garden when we were growing up and Mom would blanch veggies to freeze them. But mainly I prefer to eat my veggies raw - I've always preferred raw veggies over cooked veggies, they just taste better to me.

Okay, Katieo, I watch this process on Food Network and I have always said to myself, "seems like a lot of work to me - I'll just eat them raw." But, having seen your photos which make them so much more attractive after blanching, why not give it a go. I'll try it and let you know. I totally love vegetables, or begetables as you call them, so why not. Thanks for sharing.

Well, it doesn't surprise me if you've been used to veggies all your life...I think for me it's more of a texture thing...I also don't feel like I NEED dip with the blanched ones...(but I'm guessing you don't NEED dip at all either, lol!)

I'm like Cranky, I eat raw veggies more out of pure laziness. This is why I love salad bars too because I can just pick and plunk in the box. I like the taste of raw(er) veggies. But, if blanching is helping you eat more veggies then right on Sister!

I tried this yesterday with the 5-year old I was babysitting and she loved the color - stated that the brocolli were the same as her crayons.

Oooh pretty! I may have to try that next time we have broccoli. I have always wondered how people got things like broccoli to look so pretty when they still tast raw yet slightly tender but not fully cooked. Now I know!

I tried it today. It makes my icky raw broccoli DELICIOUS! It still tases "raw", but just so yummy. Juicier, too. Thanks for the insight!
