Yummy Tortilla Soup Recipe

I had to go to a luncheon (I really did have to go - I'm trying so hard to be good that I didn't want to throw myself in with the tons of goodies that would be there). We were served Tortilla Soup. And let me just tell you, it was splendid! I even asked for the recipe. I looked it over and it looked just fine. So here it is:

1 large onion, chopped
2 cloves garlic
2 Tbsp. oil
2 lb. diced or shredded, cooked chicken
1 (14 1/2 oz.) can tomatoes
1 (5 oz) can Ro-Tel tomatoes & green chilies
1 can beef broth
1 can chicken broth
1 can tomato soup
1 1/2 cans water
1 can drained corn
1 can drained black beans
1 tsp. cumin
1/2 to 1 tsp. chili powder
1 small can tomato sauce
1 tsp. salt
1 tsp. lemon pepper
2 tsp. Worcestershire sauce

Saute first five ingredients. Add remaining ingredients. Simmer for 1 hour. Serve with grated cheese, tortilla chips & sour cream.

Now, when I ate it, I held on the cheese, chips & sour cream. I don't know, but something about all of these spices together, it was wonderful!

By the way, I'm doing great today and I had a great day yesterday. Day by day, that's how it happens! (Loaf of Pumpkin bread, 2 more plates of cookies all put in the freezer for a later date).

Well, I know what I'm making for dinner tonight!! I love Mexican food (okay, we all really know its more like Meximerican) and tortilla soup is a personal favorite! I'll let you know how it goes! :)

That sounds delicious! And perfect for packing cold-weather lunches. Most of these indgredients are already in my cupboard/fridge too, SCORE!

As for your chicken wrap post the other day, you may feel embarrassed, but who among us wouldn't have done the EXACT same thing?!?

I had Taco Soup planned for dinner this week but just couldn't bring myself to make it. It's a great recipe and very WW friendly but I am tired of it and I know my family is too. Maybe I'll try this recipe for a change...
Instead of the Taco Soup this week I made up a recipe for a White Bean Chile Soup that was very fast to make. It was good! I will try to write down and recipe and share it with you. - Lisa
