I'm a big fan of mandarin oranges in my salad. My fantastic salad for lunch yesterday was red leaf lettuce, grape tomatoes, goat cheese, craisins, and some red wine vinagrette. Yummm... Your salad looks great too - I always forget about putting hard boiled eggs in my salad... :o)
I make a couple different kinds. I may be a total clutz in the kitchen when it comes to cooking, BUT I consider myself a salad-making MASTER. ;-)

Baby greens or mixed butter lettuces, gorgonzola or blue cheese, red onions, walnuts, raspberry vinegarette (Ken's Steak House makes a great lite version).
This next one is quick and easy, but does require making the black bean-corn salsa in advance:
Baby greens or mixed butter lettuces, avocado, Black bean-corn salsa (Black beans, corn, tomatoes, cilantro, red onion, scallion, cumin, lime juice, fresh jalapenos (optional), salt to taste), pepper-jack cheese, a little olive oil, and lime juice
Baby greens or mixed butter lettuces, Apples, red onions, pepper jack cheese, bacon, avocado, honey-dijon or mustard vinegarette (I usually just make balsamic vingerette and add some brown mustard or honey-dijon mustard)
This next one requires a little more prep, but quick if you toast the almonds & coconut ahead of time if you want to make it again).
Baby greens or mixed butter lettuces, red cabbage, napa cabbage, bean spots (NOT alfalfa, but those long ones you see in Chinese food) toasted slivered almonds, mandarin oranges, toasted coconut, chicken, water chesnuts, some kind of Asian vinegarette

This is a rip-off of a local swanky restaurant's salad that I droll over just thinking about:
Baby greens or mixed butter lettuces, Fresh mango, avocado, red onion, tomato (optional), sesame-crusted RARE tuna (seriously, after rolling the tuna in white and black sesame seeds, just put it on the grill or hot pan and flip it over immediately, do same thing on other side and take it off immediately. High quality, sushi grade tuna is the ONLY thing you should use when trying this one. Just enough to cook the outer layer ONLY. Otherwise, the flavor of the tuna changes the whole salad). Use an Asian vinegarette or a cilantro-lime vinegarette is nice, too.

lots of great ideas here! i have started keeping cut cherry tomatoes and red onions in balsamic vinegar... it's very flavorful to throw on anything, but i use them a lot with salads. I also add chickpeas or dark kidney beans to mine or baked tofu if i have it in the fridge. my salads always come together at the last minute :) but my absolute favorite thing to put on them is galeo's miso dressing (or any of their flavors)... they are yummy and low cal, but not sure if they are good for WW though... their web site is galeoscafe.com. if you like ranch dressing, Follow Your Heart brand has two low fat ranch dressings you can usually find in the produce section with the vegetarian food.
Romaine lettuce, almonds, parmesan cheese, apples or craisins, a few croutons, salt and pepper, red bell peppers, chicken and usually balsamic vinaigrette. I like it a lot and it's very filling esp. if you have an orange with it.
For a lunch salad I'll usually have baby spinach with cucumber, tomato, and mushrooms cut up, and a slice of fat-free ham chopped with an ounce of low-fat cheddar cheese chopped. And I'm in love with Kraft Sweet Onion Viniagrette (sp?).
A really easy salad is La Ensalada Chilena. It's a typical Chilean salad served at literally, every event at which there is food in Chilean culture.
peel like three tomato's, then cut them into, aaaah, I forgot the word in English, not slices, but when the pieces are like chunks of tomato. Yeah, that. Anyways, cut one onion into really thin slices, and put the whole thing in a bowl of super HOT water with a few pinches of salt. let the mixture sit for like 10-15 minutes. this makes the onion not so strong. take the onion out of the salt water, rinse it, and mix with the tomato. add olive oil, a little basil, salt and cracked paper to taste-it's delicious!
I use avocado and cucumber religiously. But thats just me. I have a friend who uses romaine and tops it with tuna and lemon juice. Then she sprinkles it with garlic powder, salt, pepper, onion powder, and seasoned salt. It sounds kinda bizarre, but when she made it for me I loved it! And hardly any calories at all! Another friend of mine does a 'salad' with steamed cabbage (sometimes she'll throw in carrots and steam them too) topped with tuna, olive oil, and salt. You'd be surprised how good that is, too!
I sue grape tomatos,grated carrot,sweet peppers,nuts and seeds,craisins or dried cherries,any kind of cheese,especially feta.I usually use some type of vinegarette dressing,if I'm going asian I like the Newman's light asian sesame,also love the Newman's light balsamic.
My tried and true salad is baby spinach or mixed baby greens, purple onion, grape tomatoes, broccoli, carrots, mushrooms, egg, and shredded cheddar with a drizzle of my FAVORITE dressing: Kraft's Caesar Vinaigrette with Parmesan - it tastes just like the dressing at Olive Garden! MMMMMM!!!
1. Diced/sliced chicken cooked with taco seasoning, tomatoes, avocado, kidney beans, black beans, corn, cilantro and Romaine lettuce. For dressing - salsa and FF sour cream.
2. Grilled chicken, feta cheese, tomatoes, and baby spinach with balsamic vinegar and oil. Also great to grill some onions when you're grilling the chicken. The tomatoes are also great grilled. I make this a lot in the summer.
3. Grilled chicken, mango, black beans, cliantro, tomatoes, avocado with Romaine. Squeeze of lime over top with a little salt and pepper.
I remembered another favorite that doesn't have lettuce - Fresh broccoli, a little bacon, sunflower seeds and a little grated swiss cheese. Dressing is FF mayo with a little Splenda and a bit of vinegar to thin it out. Salt and pepper.

I'm a big fan of sunflower seeds, mandarin oranges, craisins, garbonzo beans - which taste wonderful with cheddar cheese, red peppers....all taste good together...just watch the dressing if you use oranges, they don't all taste good...my all time favorite is lettuce, peas, carrots, brocoli and tri-color rotini, all served cold with a fat free italian dressing....yum!!
My friend and I like to empty out the veggie bin into our salads. Tonight it was lettuce and spinach and mixed greens with red pepper, mushroom, avocado, carrot, cucumber, sugar snap peas, leeks, onion, and broccoli topped with a homemade balsamic vinegarette. balsamic vinegar, extra virgin olive oil, brown sugar and mustard powder. (we put 1 tbsp brown sugar and 1/4-1/2 tsp. mustard powder to every 1/2 bottle that we make.)
We've been eating a lot of salads lately with pear, goat cheese, and crumbled roasted hazlenuts, with a maple vinagrette. Kinda sweet and high calorie, but tasty.
Katieo: I love to start with romaine, maybe a little spinach, sprinkle a little reduced fat feta cheese, a few craisins, cucumber, pepper, mushrooms, carrots and maybe a little chicken if I'm in the mood. I top it off with a 1/4 cup of fiber one cereal (instead of croutons) and then use the balsamic breeze spritzer. It is really low in points and you get a whole plate full. What more can a girl want!!!
i looooove spinach leaves with pine nuts and feta cheese. i add different stuff to it, depending on my mood: tomatoes, red peppers, avacadoes, red onions, chicken, steak strips, etc. then i almost always top it off with italian dressing by "good seasons" (those make-it-yourself salad dressing envelopes). it's super yummy salad dressing. or they have a "newman's own" combo at costco right now with light balsamic vinaigrette and low fat sesame ginger dressing. the sesame ginger is divine!
We're Katie and Molly. Just a couple of sisters who would like to be smaller. Katie is 27 and trying to lose the rest of her postpartum weight. Molly isn't 27 and would like to lose about 30 pounds all together. Neither of us have ever been a size 6 and we're curious. Can we do it? Stay tuned! We post at least once daily.
Although we weigh-in every Friday, we have chosen to measure our progress publicly by pants size rather than pounds. Both of us use weights on a regular basis and find our actual weight doesn't always match the changes we see in our body. Katie is 15.7 pounds down (size 8), Molly is down 15.2 (size ?) We are both well on our way!

for some good ideas, I like to add toasted almonds, or sunflower seeds. Apples and pears also taste pretty good. Salsa is good. Black beans.
